Fit Fudge

A healthy ‘after dinner’ indulgence but not for regular consumption! Try having it with herbal tea.

This Fit Fudge is a tried and tested recipe, popular with our corporate workshop attendees, Meno Meet Up and retreat guests. It is from our Autumn Reset recipe book.

Absolutely delicious, I make a batch and keep them in the freezer. Thank you!


Fit Fudge

Ingredients:


85g pecans

85g walnuts

85g almonds

1 tsp ground cinnamon

50g ‘no sugar’ cranberries

150g pitted dates

200g dark chocolate

75g tahini

Zest from 1 orange

Juice from 1⁄2 orange


Method;


1. In a high speed processor grind nuts until fine.

2. Add cinnamon and cranberries.

3. Put the chocolate in a pan with the tahini and melt over a low heat.

4. Place dates and melted chocolate in the processor, add the orange juice and zest and process to form a thick paste-like consistency.

5. Place the mixture in a lined 20cm shallow square tin and press down firmly.

6. Chill for 3-4 hours until hard.

7. Cut into very small 2.5 cm squares.

1 snack portion = 2 squares.
