Recipe – Cinnamon Fruit Porridge

With days still pretty damp and cool, a warming porridge with berries for breakfast is still a great choice.  It will keep your blood sugars balanced, give you a good dose of antioxidants and with added seeds you also get a dose of phytoestrogens, protein and omega 3. Cinnamon brings a warm flavour and has been shown to reduce post prandial blood sugar.  

Cinnamon Fruit Porridge

Serves 1

40g whole porridge oats

150-200ml your choice of milk

1/2 – 1 tsp ground cinnamon

1 tbsp ground flaxseed

1 tbsp essential seed mix / mixed nuts

80g berries of your choice

1. Place the oats in a pan and cover with your

chosen milk.

2. Bring to the boil then gently simmer, stirring

until the porridge thickens and the oats soften.

3. Stir the cinnamon and flaxseed into the

porridge before putting into a bowl.

4. Scatter the seed mix and berries onto the porridge and serve.
