Ingredients and Preparation

This recipe for our Watermelon Mint and Feta Salad Recipe serves 8 people and uses simple, fresh ingredients you can find at any grocery store or farmer’s market:

  • 1.5 kg fresh watermelon, cubed

  • 1 red onion

  • 1 cup pitted black olives

  • Juice of 4 fresh limes

  • 4 tablespoons extra virgin olive oil

  • 2/3 pack of feta cheese, cubed

  • Small bunch of mint, roughly torn

  • Small bunch of parsley, roughly torn

  • Freshly ground black pepper

Method

  1. Pickle the Onion

Slice the red onion thinly and steep it in the lime juice for about 10 minutes. This process softens the onion’s sharpness and adds a subtle tang.

  2. Combine the Main Ingredients

In a large bowl, gently mix the watermelon cubes, feta cheese, torn mint and parsley leaves, black olives, and olive oil. Add a couple of grinds of black pepper to taste.

  3. Add the Onion and Lime Juice

Carefully toss the pickled onions with the rest of the salad ingredients. The lime juice adds brightness and ties all the flavors together.

Why This Watermelon Mint and Feta Salad Recipe Works So Well

The combination of sweet, salty, and tangy flavours makes this salad stand out. Watermelon provides natural sweetness and hydration, perfect for hot days. Feta cheese adds a creamy, salty contrast that balances the sweetness. Black olives contribute a briny depth, while the fresh herbs bring an aromatic lift. The lime juice brightens the whole dish and softens the onion’s bite.

This salad is not only delicious but also visually appealing. The vibrant reds, greens, and whites make it a beautiful addition to any table.

Tips for Serving and Pairing

  • Serve as a Side Dish

This salad pairs wonderfully with grilled proteins. Try it alongside jerk chicken or harissa sardines for a meal that feels both fresh and satisfying.

  • Keep It Cool

Chill the salad for at least 30 minutes before serving. This enhances the flavours and keeps it refreshing.

  • Adjust Ingredients to Taste

If you prefer less saltiness, reduce the amount of feta or olives. For more zest, add extra lime juice or a sprinkle of chilli flakes.

  • Make It Ahead

Prepare the salad a few hours before your event. The flavours meld beautifully over time, making it even tastier.

Nutritional Benefits

This salad offers more than just great taste. Watermelon is rich in vitamins A and C and helps keep you hydrated. Feta cheese provides calcium and protein, while olives add healthy fats. The fresh herbs contribute antioxidants and a burst of freshness without added calories.

Variations to Try

  • Add Cucumber

For extra crunch and freshness, toss in some diced cucumber.

  • Use Different Herbs

Swap parsley for basil or cilantro to change the flavour profile.

  • Include Nuts

Toasted pine nuts or walnuts add texture and a nutty flavour.

  • Make It Vegan

Replace feta with a plant-based cheese or omit it entirely for a vegan-friendly option.
