Tangerine Jelly Recipe
I have always loved jelly. It is refreshing, fun and easy to make.
The universal jelly principle is Liquid + Gelling Agent = Jelly. That is my kind of cooking! If you need any more excuses to make it you could consider the fact that gelatine contains collagen and has been shown to be skin protective.
400 ml of freshly squeeze tangerine juice
¼ cup of cool water
¼ cup of near boiling water
3-4 sheets of gelatine
Poor the cool water over the gelatine leaves and soak for 5 minutes.
Squeeze out the excess water and pour on the hot water whisking all of the time.
Add the juice to the gelatine.
Put into a bowl and put in the fridge for 2-3 hours.
Note the more gelatine you use the firmer the jelly will become. Do not use boiling water as this will stop the jelly from setting.
